Ingredients
- 3 large red skin potatoes
- 1 cup sweet peas
- 1 tablespoon capers
- ½ cup parmesan cheese
- 2 large cans drained white tuna
- Salt
- Black pepper
- 1 teaspoon lime juice
- ¼ cup sour cream
- ¼ cup mayonnaise
- ½ Tablespoons chili powder
How to Make It
- I leave the skin on my potatoes when I make this salad, but the choice is certainly yours. Boil the water with salt. Cook the potatoes until done but don’t overcook them. Nothing worse than a mushy potato salad.
- Let the potatoes cool.
- In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, spices, and seasonings.
- Add the cooled down potatoes, peas, drained tuna, peas, and capers. Mix well.
- Finally, add the parmesan cheese and combine again.
