Ingredients
- Kosher salt
- Coarse pepper
- Smoked paprika
- Onion powder
- Olive oil
- Cast iron griddle
- Turkey chops (Only certain butchers offer turkey chops. We get them from Mr. T's Meat Market on Westem and 62nd, but if you're not from around the way, find them somewhere.)
- Mesquite charcoal
- ½ cup chicken broth
How to Make It
- Coat the turkey chops in olive oil and add your seasonings. Grill them on a mesquite charcoal fire for 15 minutes. Take them off, put them in the pan with some chicken broth and cover them and steam them on 400 degrees for another 20 minutes, because you need that flavor.
- They gonna be soft, breaking apart and moist!
