Tomatoes stuffed with fresh made Middle East sprouted hummus sauce.
Ingredients
- 2 medium tomatoes
- 2 tbsp tahini
- ½ cup coconut flesh
- 1 cup sprouted chickpeas
- 2 tbsp fresh coriander
- ¼ cup soaked pumpkin seeds
- 1 lemon juice
- 1 garlic clove
- Pinch of ground white pepper
- Pinch of mustard powder
- Pinch of cayenne
- 2 tbsp olive oil
- Salt
- Water as needed
How to Make It
- Remove the inside part of the tomatoes using a spoon and keep it aside.
- Put the rest of the ingredients and the tomato inside in a blender and blend well until it becomes a smooth mixture.
- Use it to fill the tomatoes. Garnish with a finely chopped fresh onion.
