Ingredients
Coconut Sauce
- 2 cups coconut milk
- ½ cup sugar
- ½ tsp salt
- 1 tbsp rice flour
Sweet Sticky Rice
- 2 cups sweet rice
- 3 cups coconut milk
- ¾ cup sugar
- ½ tsp salt
- 3–4 ripe mangoes, for garnish
How to Make It
- To make the sauce, add coconut milk, sugar, salt, and rice flour to Instant Pot and select the Sauté mode.
- Bring to boil while gently stirring. Let mixture thicken. Remove sauce from the Instant Pot and set aside.
- To make the rice, add the sweet rice and 3 cups water to the Instant Pot. Select Rice mode. Press start.
- Once rice is cooked, remove the lid and add 3 cups coconut milk, sugar, and salt to cooked rice. Secure the lid and steam for 5 minutes. Let the steam release naturally before removing the lid.
- Peel and slice fresh mango to serve on side.
- To serve, place a large spoonful of sweet sticky rice on plate with some fresh mango on the side. Drizzle with the coconut sauce.
