Sweet Chili Meatballs

Ingredients

  • 1 lb Ground Pork
  • 2 Green Onions, thinly sliced
  • 1 tsp. Garlic, minced
  • ½ tsp. Ginger, minced
  • 2 tsp. Soy Sauce
  • 2 tsp. Sesame Oil
  • Juice of 1/2 Lime
  • 2 tsp. Chili Paste
  • 2 tsp. Erythritol
  • 1 Tbsp. Rice Wine Vinegar
  • ¼ Cup Pork Rinds
  • 1 Large Egg, beaten
Sauce
  • 2 Tbsp. Sugar Free Ketchup
  • 1 Tbsp. Chili Garlic Paste
  • 1 Tbsp. Lime Juice
  • 1 tsp. Sesame Oil
  • 1 tsp. Rice Vinegar
  • 1½ tsp. Soy Sauce
  • 1 tsp. Erythritol
How to Make It
  1. Preheat oven to 400F.  
  2. Combine all meatball ingredients and mix well with your hands.  
  3. Form into 16-20 meatballs and spread out on a foil covered baking sheet.  
  4. Bake for 12-15 minutes or until internal temperature reaches 165F.  
  5. While they are baking, combine all ingredients for the sauce and mix well.  
  6. When meatballs are removed from oven, spoon a small amount of sauce over each meatball and garnish with spring onion.
