Ingredients
- 1 lb Ground Pork
- 2 Green Onions, thinly sliced
- 1 tsp. Garlic, minced
- ½ tsp. Ginger, minced
- 2 tsp. Soy Sauce
- 2 tsp. Sesame Oil
- Juice of 1/2 Lime
- 2 tsp. Chili Paste
- 2 tsp. Erythritol
- 1 Tbsp. Rice Wine Vinegar
- ¼ Cup Pork Rinds
- 1 Large Egg, beaten
Sauce
- 2 Tbsp. Sugar Free Ketchup
- 1 Tbsp. Chili Garlic Paste
- 1 Tbsp. Lime Juice
- 1 tsp. Sesame Oil
- 1 tsp. Rice Vinegar
- 1½ tsp. Soy Sauce
- 1 tsp. Erythritol
How to Make It
- Preheat oven to 400F.
- Combine all meatball ingredients and mix well with your hands.
- Form into 16-20 meatballs and spread out on a foil covered baking sheet.
- Bake for 12-15 minutes or until internal temperature reaches 165F.
- While they are baking, combine all ingredients for the sauce and mix well.
- When meatballs are removed from oven, spoon a small amount of sauce over each meatball and garnish with spring onion.
