Ingredients
Dressing
- ¼ cup fresh lime juice
- 1 teaspoon rice vinegar
- 1 clove garlic, pressed
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
Salad
- ½ cup peas
- ½ cup mushrooms, sliced
- ½ summer squash, diced
- 1 carrot, chopped
- 1 cup couscous, cooked
- 1 red onion, diced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons fresh basil, chopped
- 3 tablespoons fresh cilantro, chopped
- ¼ cup pine nuts
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- ½ cup spinach leaves, for garnish
How to Make It
- Whisk lime juice, vinegar, garlic, salt, and pepper together in a small bowl.
- Place peas, mushrooms, squash, and carrots in a steamer and cook for 10 minutes until tender.
- Place steamed vegetables, couscous, onion, parsley, thyme, basil, cilantro, pine nuts, salt, and pepper in a salad bowl and toss with the dressing.
- Serve on a bed of spinach leaves.
