Sassy bean and quinoa salad recipe

Ingredients

Dressing
  • 2 tablespoons walnut oil
  • 1 tablespoon raw, unfiltered apple cider vinegar
  • 1 clove garlic, pressed
  • 1 teaspoon fresh ginger, minced
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • Pinch cayenne
Salad
  • ½ cup spinach leaves, chopped
  • ½ cup mushrooms, chopped
  • 1 scallion, chopped
  • 1 cup kidney beans, cooked
  • 1 cup quinoa, cooked
  • 1 carrot, sliced
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons dill, for garnish
How to Make It
  1. Whisk oil, vinegar, garlic, ginger, salt, pepper, and cayenne together in a small bowl.
  2. Place spinach, mushrooms, scallion, kidney beans, quinoa, carrot, and oregano in a salad bowl and toss with the dressing. Garnish with dill.
