Ingredients
Dressing
- 2 tablespoons walnut oil
- 1 tablespoon raw, unfiltered apple cider vinegar
- 1 clove garlic, pressed
- 1 teaspoon fresh ginger, minced
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- Pinch cayenne
Salad
- ½ cup spinach leaves, chopped
- ½ cup mushrooms, chopped
- 1 scallion, chopped
- 1 cup kidney beans, cooked
- 1 cup quinoa, cooked
- 1 carrot, sliced
- 1 tablespoon fresh oregano, chopped
- 2 tablespoons dill, for garnish
How to Make It
- Whisk oil, vinegar, garlic, ginger, salt, pepper, and cayenne together in a small bowl.
- Place spinach, mushrooms, scallion, kidney beans, quinoa, carrot, and oregano in a salad bowl and toss with the dressing. Garnish with dill.
