Ingredients
For the dough
- ¾ cup cold water
- ¾ teaspoon olive oil
- ¾ teaspoon sugar
- 0.12 teaspoon salt
- 1½ -2 cups high-gluten flour
- 0.12 teaspoon instant yeast
- 2 tablespoons all-purpose flour
- ½ teaspoon cornmeal
For the sauce
- 1 tablespoon olive oil
- 1 cup diced tomatoes
- 1 tablespoon minced garlic
- 1 teaspoon chopped fresh oregano
- 1 teaspoon chopped fresh basil
- 1 teaspoon dry Italian seasoning
- 1 cup tomato sauce
- ½ cup tomato paste
For the toppings
- ½ cup diced, cooked Italian sausage
- ½ cup chopped fresh mushrooms
- ½ cup thinly sliced Spanish yellow onions
- ½ cup thinly sliced green bell peppers
- ¼ cup sliced black olives
- 1¼ cups shredded whole-milk mozzarella cheese
- ½ cup thinly sliced pepperoni
How to Make It

To make the dough
- Place water, olive oil, sugar, and salt in the large bowl of an electric mixer. Mix on low speed for 3 minutes, until the sugar and salt are dissolved. Slowly add 1½ cups high-gluten flour and mix on low speed for 3 minutes. Add yeast and mix on medium speed for another 4 minutes. (Use additional flour if necessary to achieve proper dough consistency: dough forms a ball and comes away from the edges of the bowl.) Remove dough from bowl, forming it into a ball. Cover dough ball with plastic wrap and place in refrigerator. Allow dough to proof for at least 1 hour.
- Place olive oil in a large sauté pan over medium heat. Add tomatoes, garlic, oregano, basil, and Italian seasoning. Cook on medium-high for about 5 minutes, stirring often and pressing down on tomatoes with the spoon. Reduce heat to medium-low and simmer for another 10 minutes, stirring occasionally. Remove from heat. Stir in tomato sauce and tomato paste. Allow sauce to cool. To make the pizza
- Preheat oven to 450–500°F. Remove dough ball from refrigerator. Allow it to rest at room temperature for 5 minutes. Sprinkle the outside of the dough ball with 2 tablespoons all-purpose flour and roll it out to flatten the dough slightly. Pick up the dough from underneath, and using clean hands clenched into fists, stretch and spin the dough until you have a 14-inch round.
- Dust a pizza pan or pizza stone with cornmeal and place stretched dough on it. Evenly spread ½ cup of sauce on the dough, leaving a 1-inch border around the outer edge. Evenly place sausage, mushrooms, onions, bell peppers, and black olives atop the pizza. Sprinkle with mozzarella cheese. Place pepperoni slices atop cheese.
- Bake pizza for 15–20 minutes or until the cheese begins to brown and crust is crisp. (You may have to bake pizza longer; No Name Pub uses a 650°F pizza oven.) Cut into 8 slices with a pizza cutter and serve immediately.
