Ingredients
- 1 cup sliced yellow onion
- 1½ cups water
- 1 clove garlic, sliced
- 2 tablespoons virgin olive oil
- ½ teaspoon sea salt dash of black pepper
- ½ cup unsweetened coconut milk
- ¼ teaspoon fresh oregano leaves (dry may be substituted)
- 4½ cups cooked rice noodles
How to Make It
- In a blender or food processor combine onions & water.
- Blend for 5 minutes or until smooth.
- In small, heavy-bottomed saucepan toast garlic over high heat for 2-3 minutes.
- Do not allow the garlic to brown or it will be bitter.
- Add onion-water mixture, olive oil, salt, & pepper; simmer for 15 minutes.
- Stir in coconut milk & oregano. Serve hot or at room temperature over rice noodles.
