Rice noodles with toasted onion sauce recipe

Ingredients

  • 1 cup sliced yellow onion
  • 1½ cups water
  • 1 clove garlic, sliced
  • 2 tablespoons virgin olive oil
  • ½ teaspoon sea salt dash of black pepper
  • ½ cup unsweetened coconut milk
  • ¼ teaspoon fresh oregano leaves (dry may be substituted)
  • 4½ cups cooked rice noodles
How to Make It
  1. In a blender or food processor combine onions & water.
  2. Blend for 5 minutes or until smooth.
  3. In small, heavy-bottomed saucepan toast garlic over high heat for 2-3 minutes.
  4. Do not allow the garlic to brown or it will be bitter.
  5. Add onion-water mixture, olive oil, salt, & pepper; simmer for 15 minutes.
  6. Stir in coconut milk & oregano. Serve hot or at room temperature over rice noodles.
