Ingredients
- 2 stalks celery, sliced
- 1 small red onion, sliced
- 4 scallions
- 1 carrot, sliced
- 1 red pepper
- 1 seedless cucumber
- ½ cup shredded cabbage
- 2 oz lemon juice
- 2 tablespoons Parsley
- 1 tablespoon Dill
- Salt and pepper to taste
- 1 tablespoon ginger, grated
- ½ cup goji berries soak to soften
- 1 avocado
- 8 nori wraps
How to Make It
- Combine all ingredients except ginger, goji berries, avocado & nori in a bowl and toss with lemon juice and herbs.
- Combine ginger and goji berries in blender. Blend until smooth.
- Mash avocado with some lemon juice. Place raw vegetables in nori wrap and roll.
