Dressing
- 2 tablespoons walnut oil
- 1 tablespoon raw, unfiltered apple cider vinegar
- Sea salt to taste
- ⅛ teaspoon cayenne
Salad
- 1 cup brown rice, cooked
- 1 stalk celery, chopped
- ½ cup raisins
- ½ cup sultanas
- 1 cup pineapple, cut into bite-sized pieces
- 2 tablespoons pineapple juice
- ½ teaspoon cinnamon
- ½ teaspoon cloves
- 1 tablespoon fresh parsley, chopped, for garnish
How to Make It
- Whisk oil, vinegar, salt, and cayenne together in a small bowl.
- Place the brown rice, celery, raisins, sultanas, pineapple, juice, cinnamon, and cloves in a salad bowl and toss with the dressing. Garnish with parsley.
