Ingredients
- 1 package premade polenta
- 2 tablespoons olive oil
- 1 cup minced onion
- 1 tablespoon sliced garlic
- 4 leaves basil
- 6 cups spinach
- ½ cup sun dried tomato
- ¾ cup veg stock
How to Make It
- Saute onion and garlic in 1 tablespoon olive oil
- Divide ½ of the mixture and place in a blender with sun dried tomatoes, veg stock and basil. Puree to make sauce.
- Saute spinach with remainder of garlic and onions with 1 tablespoon olive oil, season with salt and pepper.
- Slice polenta and layer spinach in between. Drizzle with sauce.
