Ingredients
- ¾ cup black beans, drained and rinsed
- ¼ cup unsweetened applesauce
- ¼ cup plain nonfat Greek yogurt (or an additional ¼ cup applesauce)
- ½ cup protein powder (or ½ cup old-fashioned oats)
- ¼ cup peanut butter, melted (or ¼ cup peanut flour
- mixed with 3 tablespoons water)
- ¼ cup unsweetened cocoa powder
- 4 large egg whites
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1½ cups sweetener that measures like sugar
- ¼ cup chocolate chips, optional
How to Make It
- Preheat the oven to 350 degrees. Spray an 8 × 8-inch baking pan with cooking spray. In a blender or a food processor place the black beans, applesauce, yogurt, protein powder, peanut butter, cocoa powder, egg whites, baking powder, baking soda, salt, and sweetener and blend until the batter is smooth. Pour batter into the prepared pan. Stir in the chocolate chips or sprinkle on top if desired. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Let cool and cut into 9 even squares.
