Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 4 cups of water
- 4 medium potatoes, cubed
- 1 tomato, chopped
- 1 yellow or red bell pepper, diced
- 1 small head broccoli, cut into florets
- 2 carrots, sliced
- ½ teaspoon cumin
- 2 tablespoons fresh basil, chopped
- 1 teaspoon chia seeds
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- 2 scallions, chopped, for garnish
How to Make It
- Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until the onion is translucent.
- Add water and potatoes and boil for approximately 15 minutes, or until potatoes are tender.
- Transfer potatoes, onions, and garlic to a blender or food processor with ½ cup of the cooking water and purée until smooth.
- Return mixture to saucepan; add the remaining ingredients and simmer for an additional 10 minutes until the broccoli is done. Garnish with scallions.
