Ingredients
- 2¾ cups old-fashioned oats, divided
- 1 cup vanilla protein powder (or flavor of choice)
- ½ cup peanut butter, softened in the microwave for 20 to 30 seconds
- 2 tablespoons honey
- 1 cup sweetener that measures like sugar
- ¾ teaspoon salt
- ¼ cup mini chocolate chips
- ½ cup cold water
How to Make It
- Add ¾ cup oats to a blender or food processor and grind into a flour-like consistency to make oat flour. In a large bowl mix together the remaining 1 ½ cups oats, oat flour, protein powder, peanut butter, honey, sweetener, salt, chocolate chips, and water until well combined. Scoop 2 tablespoons of the mixture into your hands and roll into a ball and place on a rimmed baking sheet. Continue with rest of the batter. Place the baking sheet in the freezer for about 30 minutes or until the cookie dough balls are firm. Cookie dough balls can be stored in a sealed container in the fridge for up to one week or in the freezer for up to one month.
