This is such a great, quick and simple to make pumpkin soup recipe, a classic version that has everything you will ever need for a traditional soup. One that you will crave again and again. Simply delicious.
Ingredients
- 1 large Pumpkin peeled and chopped into large chunks
- 1 x Onion diced the hidden ingredient that adds an additional body of flavour into the soup flavour
- 1L (2 pints) of vegetable stock and water
- ¼ cup (60 ml) full cream swirled on top at the end
How to Make It
- Add the peeled and diced pumpkin, onion, vegetable stock and water into a saucepan.
- Boil on full heat for 15 minutes or until the pumpkin is really tender.
- Now, using a blender, mix to a smooth paste, season with salt and pepper to taste and then simmer for a further 15 minutes on the hob.
- Finally add a swirl of cream and serve immediately.
