A cobbler is an American fruit pie that’s usually made with fresh fruit or berries such as apples, peaches, blueberries or cherries. The fruit or berries are covered with a thick, undulating layer of dough that gets a lovely crust when baked. The cobbler is soft and juicy but crunchy on top. The dough is a mixture of crumble and sponge cake.
Ingredients
Cobbler Dough
- 4 oz (100 g) butter
- 150 g plain flour
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 1 finely grated lemon zest
- 1 pinch salt
- 2 oz (50 g) sugar
- 3 fl oz (75 ml) cream
- 2 oz (50 g) coconut flakes
Filling
- 18 oz (500 g) mixed berries (currants, blueberries, raspberries)
- 4 oz (100 g) demerara sugar
- 3 peaches, thinly sliced
- 2 oz (50 g) flaked almonds
How to Make It
- Preheat the oven to 180°C (350°F/gas 4).
- Cube the butter into small pieces and rub it into the flour, vanilla sugar, baking powder, grated lemon zest, salt and sugar.
- Add a little cream at a time and mix in the coconut flakes.
- Mix the berries with the demerara sugar. Cut the peaches into segments.
- Layer the berries, fruit and cobbler mixture in a small oven-safe dish (about 20 x 15 cm/8 x 6 inches). Sprinkle with the flaked almonds.
- Bake in the middle of the oven for about 25 minutes until the top is golden.
