Fresh mint really brings out the sweetness of the juicy melon in this bright and summery salad.
Ingredients
- 1 cup water
- ¾ cup sugar
- 3 tbsp lime juice
- 2 tsp fresh mint, chopped
- 5 cup watermelon, cubed
- 3 cup cantaloupe, cubed
- 3 cup honeydew, cubed
- 2 cup nectarines, pitted and sliced
- 1 cup blueberries
- Garnish: fresh mint sprigs
How to Make It
- Combine water, sugar, juice and mint in a saucepan; bring to a boil. Boil for 2 minutes, stirring constantly. Remove from heat; cover and cool completely.
- Meanwhile, combine fruit in a 13"x 9" glass baking pan. Pour cooled dressing over fruit; stir until well coated. Cover and chill for at least 2 hours, stirring occasionally. Drain liquid before serving. Garnish with fresh mint sprigs.
