Ingredients

For the Hamburgers
  • 1½ pounds 80% lean ground beef
  • ¼ cup shredded Monterey or Colby Jack cheese
  • 2 tablespoons barbecue sauce or ketchup
  • 1½ teaspoons seasoned salt (such as Lawry’s), plus more to taste

  • 4 slices cheddar cheese (optional)
  • 2 tablespoons unsalted butter, at room temperature
  • 4 hamburger buns
For the Special Sauce
  • ¼ cup mayonnaise
  • 1 to 2 tablespoons ketchup
  • ½ to 1 tablespoon dill pickle relish
  • ¼ teaspoon seasoned salt (such as Lawry’s), plus more to taste
  • Optional Toppings: cooked bacon, lettuce leaves, tomato slices, sliced onion, pickles, jalapeño rings
How to Make It
    Make the Hamburgers
  1. Heat a grill to medium-high.
  2. Combine the ground beef, shredded cheese, barbecue sauce, seasoned salt, onion powder, and pepper in a medium bowl. Mix with your hands until just combined. Shape the mixture into 4 patties about ¾ inch thick. Indent the center of the patties with your thumb to keep them from bulging in the middle.
  3. Grill the burgers for 4 to 5 minutes per side, or until the center is no longer pink. If desired, top the patties with cheese slices and grill until the cheese has melted. Remove the burgers from the grill and set aside on a platter.
  4. Spread the butter on the inside of the buns and place them on the grill for 1 to 2 minutes, or until lightly toasted.
  5. Make the Special Sauce
  6. In a small bowl, whisk together the mayonnaise, ketchup, relish, and seasoned salt. Add additional salt, if desired.
  7. Serve the hamburgers on the toasted buns with the special sauce and your favorite toppings.
