Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 scallions, chopped; reserve ½ cup for garnish
- 2 cloves garlic, minced
- ½ cup mushrooms, sliced
- ½ yellow bell pepper, diced
- ½ red bell pepper, diced
- 1 potato, peeled, cooked, and diced
- ½ cup okra, steamed and sliced
- ½ cup cherry tomatoes, halved
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- Pinch cayenne
How to Make It
- Heat the oil in a skillet over medium heat and sauté the onion, scallions, garlic, and mushrooms until the onion is translucent.
- Add the yellow and red bell pepper, potato, okra, cherry tomatoes, basil, oregano, salt, pepper, and cayenne and sauté for 15 minutes. Serve warm.
