Italian mushroom and potato salad recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 scallions, chopped; reserve ½ cup for garnish
  • 2 cloves garlic, minced
  • ½ cup mushrooms, sliced
  • ½ yellow bell pepper, diced
  • ½ red bell pepper, diced
  • 1 potato, peeled, cooked, and diced
  • ½ cup okra, steamed and sliced
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • Pinch cayenne
How to Make It
  1. Heat the oil in a skillet over medium heat and sauté the onion, scallions, garlic, and mushrooms until the onion is translucent.
  2. Add the yellow and red bell pepper, potato, okra, cherry tomatoes, basil, oregano, salt, pepper, and cayenne and sauté for 15 minutes. Serve warm.
