Instead of bread or potatoes, mix it up at mealtime with hearty fried polenta. This recipe takes advantage of Polenta that you may have left over from breakfast and works equally well as an appetizer, side dish, or a special breakfast treat drizzled with maple syrup.
Ingredients
- ½ batch of Polenta, prepared for Fried Polenta Sticks, brought to room temperature
- 1 tablespoon olive oil
How to Make It
- Slice the polenta into sticks about ½ inch (13 mm) wide. Blot them gently between paper towels to remove excess moisture.
- Heat the oil in a skillet over medium-high heat. Lower the heat to medium and add the polenta slices. Cook them for 2 to 3 minutes per side, until they are lightly browned on all sides. Serve immediately.
