I wanted to leave them as a blank canvas so you could experiment with additions, but if you want to make them cheesy (like the ones from said restaurant), just add 2 tablespoons each of nutritional yeast and freshly chopped chives, then add as much vegan cheddar shreds as you can handle. Hollaaaa! And if you’re going for a fancy dinner roll, then fold in fresh herbs like rosemary or thyme, some ground pepper, and call it a night.

Ingredients

  • 1 cup unsweetened soy or almond milk
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons freshly squeezed lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt, or 1½ teaspoons sea salt if using coconut oil
  • 5 tablespoons cold vegan butter or cold solid coconut oil
  • Jam and vegan butter, for serving
How to Make It
  1. Preheat the oven to 450°F.
  2. Combine the milk with the vinegar and lemon juice in a small bowl. Set aside for 10 minutes to curdle.
  3. In a large bowl, combine the flour, baking powder, baking soda, and salt with a whisk or fork. (If you’re making cheesy biscuits, add the nutritional yeast here.)
  4. Cut the cold butter or oil into the flour mixture using a pastry blender until you have a crumblike texture.
  5. Create a well in the middle of the dry ingredients and pour the liquid mixture into it. (If you’re adding any other extras, do it now.) Then gently fold the batter a few times until just combined. Do not overmix!
  6. Lightly grease a baking sheet or line with parchment paper.
  7. Place the dough on a floured work surface. Lightly flour your hands and gently flatten the dough until it’s approximately 8 to 10 inches wide and 1½ inches thick.
  8. Lightly flour a 2 to 2½-inch round cookie cutter and cut out as many biscuits as you can. Place the biscuits on the baking sheet.
  9. Try not to handle the dough too much, but create another, smaller round of dough with the same thickness as before and cut out more biscuits until only a scrap of dough remains.
  10. To get extra lift in your biscuits, lightly poke a fork a few times across the top of each biscuit. Bake for 10 minutes and serve slightly warm with jam or more vegan butter.
