Ingredients
- 1 cup tempeh in ½-inch cubes
- 1 tablespoon coconut oil
- ¼ cup carrot pieces
- 2 tablespoons celery pieces
- ½ cup crunchy lentil sprouts
- ¼ cup sunflower seeds
- ¼ teaspoon sea salt
- 1 teaspoon chopped basil
- ¼ cup Curried Tomato Sauce
Curried Tomato Sauce
- ¼ cup extra virgin olive oil
- ½ cup diced tomatoes
- 3 tablespoons tomato paste
- 1 tablespoon minced parsley
- 1 tablespoon minced basil
- 1/3 cup rice milk (Rice Dream)
- 2 teaspoons curry powder
- ½ teaspoon cinnamon
How to Make It
- Preheat oven to 325 degrees.
- Brown the tempeh on all sides in the oil.
- Combine tempeh & remaining ingredients in a blender or food processor; process for 1 minute. Shape into 2-4 burgers.
- Bake on a greased cookie sheet for 20 to 25 minutes.
- Serve with salad and Curried Tomato Sauce or almost any dressing. Curried Tomato Sauce
- Combine above ingredients in a blender or food processor, process until creamy, about 1 minute.
- Pour the mixture into a medium-size saucepan, bring to a simmer.
- Simmer for 5 minutes.
- Remove from the heat and serve over vegetables, grains, or pasta.
