Ingredients

  • 2 large cucumbers, chopped
  • ½ small red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons extra-virgin olive oil
  • Sea salt to taste
How to Make It
  1. Combine the cucumbers, onion, parsley and mint in a bowl.
  2. In a small bowl, whisk the apple cider vinegar, olive oil and sea salt.
  3. Toss the dressing with the vegetables and serve.
