Creamy potato soup recipe

Ingredients

  • 1 cup peeled, cubed potatoes
  • ¼ cup sliced celery
  • ½ cup diced onions
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne
  • Dash of freshly ground black pepper
  • 1½ cups of water
  • 1 vegetable bouillon cube
  • 1 to 2 cups coconut milk
How to Make It
  1. In a large saucepan, saute the potatoes, celery, and onions in the oil over medium heat for 10 minutes.
  2. Add the remaining ingredients and cook, covered, over medium to low heat for 25 to 30 minutes.
