Ingredients
- 1 cup peeled, cubed potatoes
- ¼ cup sliced celery
- ½ cup diced onions
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon cayenne
- Dash of freshly ground black pepper
- 1½ cups of water
- 1 vegetable bouillon cube
- 1 to 2 cups coconut milk
How to Make It
- In a large saucepan, saute the potatoes, celery, and onions in the oil over medium heat for 10 minutes.
- Add the remaining ingredients and cook, covered, over medium to low heat for 25 to 30 minutes.
