Ingredients
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- ¾ teaspoon cumin seeds
- Kosher salt and black pepper
- 1 pita bread, toasted
- 1 cup fresh or frozen corn kernels
- 1 cup halved cherry tomatoes
- 4 radishes, quartered
- 2 small cucumbers, sliced
- Torn fresh mint, for serving
How to Make It
- Combine 2 tablespoons of the oil, the lime juice, and cumin seeds; season with ½ teaspoon each salt and pepper.
- Brush the pita with the remaining tablespoon of oil. Tear into pieces and toss with the corn, tomatoes, radishes, cucumbers, and the dressing. Top with mint.
