Ingredients
- 3 cups flour
- 1½ cups sugar, divided
- 1 tsp salt
- 2 tsp baking powder
- 1½ cups coconut milk
- 2 eggs
- 1 tbsp vanilla extract
- ¼ cup olive oil
- 4 tbsp butter
- 1 cup sugar
- 4 cups fresh pie cherries, pitted
How to Make It
- In medium bowl, add flour, ½ cup sugar, salt, and baking powder, whisking everything together to combine. Set aside.
- In another bowl, combine coconut milk, eggs, vanilla, and olive oil. Whisk together to combine.
- Add coconut milk mixture to flour mixture. Stir to combine. If necessary, use additional coconut milk to create a thick pancake-like batter. Set aside.
- Select Sauté mode on the Instant Pot.
- Add butter and melt while gently stirring. Once butter is melted, add 1 cup sugar. Mix together.
- Add freshly pitted pie cherries to the butter and sugar. Sauté for 2–3 minutes.
- Pour cobbler batter over cherries. Secure Instant Pot. Set mode to Cake. Press start.
- When finished, let pressure release naturally. Remove lid.
- Serve warm with your favorite ice cream.
