Ingredients
- 6 ounces (170 g) Enjoy Life semisweet chocolate chips
- 3 tablespoons (37.5 g) Spectrum Organic Shortening
- 2 tablespoons (30 ml) rice milk or safe milk alternative
- 3½ tablespoons (28 g) powdered sugar
- ½ cup (112 g) sunflower seed kernels, ground into a meal
- 1 (1.4-ounce, 40-g) Enjoy Life boom CHOCO boom dark chocolate or dairy-free rice milk bar, grated
How to Make It
- Place chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring at each interval until smooth. Stir in the shortening, milk, powdered sugar, and ground sunflower seeds. Let sit to cool until firm enough to roll into balls.
- Place the grated chocolate on a rimmed plate and roll the truffles in the grated chocolate to coat them. Place the truffles in mini cupcake liners and chill in the refrigerator.
