Ingredients
Cake Batter
- 250 ml vegetable oil
- 200 g castor sugar
- 3 large eggs
- 160 g cake flour
- 80 ml good-quality cocoa powder
- 5 ml baking powder
- a pinch of salt
- 125 ml buttermilk
Icing
- 125 ml whipping cream
- 200 g raspberries, sliced (keep some whole, for decorating)
- 125 ml chocolate ganache icing
How to Make It
- Preheat the oven to 160 °C. Grease and line the base of 2 × 20 cm round cake pans. To Make the Cake
- Whisk together the oil, sugar and eggs. Sift together the dry ingredients, and then beat into the oil mixture until combined. Fold in the buttermilk, pour the batter into the prepared pans and bake for 20 minutes, or until well risen and a metal skewer inserted into the centre comes out clean. Turn out the cakes onto a wire rack and leave to cool completely. Assembling the Cake
- Whip the cream to stiff peak stage and spread over the top of one of the cakes, scatter raspberries over the cream and then place the second cake on top. Spread ganache icing over the top cake, decorate with a few whole raspberries and serve.
