Ingredients
- 1½ cups (192 grams) Basic Flour Blend
- ½ teaspoon xanthan gum
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup (108 g) organic light brown sugar
- 8 tablespoons shortening, melted
- ¼ cup plus 2 tablespoons (90 g) Applesauce
- 1½ teaspoons Vanilla Extract
- ⅓ cup (80 g) chocolate chunks or dark chocolate chips
How to Make It
- Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) square baking dish.
- Combine the flour, xanthan gum, baking powder, and salt in a medium bowl.
- Combine the sugar and melted shortening (while still warm) in a separate mixing bowl. Stir until the sugar is melted.
- Add the applesauce and vanilla to the wet ingredients and stir for 20 seconds to combine.
- Add the dry ingredients and stir by hand until the ingredients are fully blended and the batter is thick and slightly glossy.
- Stir in the chocolate chunks, by hand.
- Scoop the batter into the prepared baking dish and use the back of a spoon to pat it to the edges of the baking dish. Redistribute the chocolate chunks, if needed, so they aren’t clumped together.
- Bake for 22 to 24 minutes, until the top is lightly browned.
- Cool the blondies completely before cutting them into squares. Store them in an airtight container at room temperature for 3 to 4 days.
