Ingredients
- ½ small banana, mashed
- 1 large egg white
- 2 tablespoons peanut flour (or oat flour* or protein powder)
- 1 teaspoon sweetener that measures like sugar
- ½ teaspoon baking powder
- Pinch of ground cinnamon
- Pinch of salt
- 1 tablespoon chopped walnuts, optional
How to Make It
- To make in the microwave: Spray a microwave-safe mug or small bowl with cooking spray. In a small bowl place the banana, egg white, peanut flour, sweetener, baking powder, cinnamon, salt, and walnuts if desired and stir until well combined. Pour the batter into the prepared mug or bowl.
- Place the mug in the microwave and microwave for 1 minute 30 seconds to 2 minutes, until the bread is set. Turn the mug upside down to release.
- To make in the oven: Preheat the oven to 350 degrees. Spray an oven-safe individual baking dish or ramekin with cooking spray. Place the banana, egg white, peanut flour, sweetener, baking powder, cinnamon, salt, and walnuts if desired in a small bowl and stir until well combined. Pour the batter into the prepared baking dish. Bake for 20 to 25 minutes or until the bread is set. When cooled, remove from the baking dish and enjoy!
