Ingredients
- Minced garlic
- Diced onions
- ½ cup oil
- ½ cup flour
- 1 cup sliced green apples
- 2 cups chicken broth
- Kosher salt
- Black pepper
- 2 tablespoons butter
- 1 smoked turkey neck
- Cinnamon (optional)
- Allspice (optional)
How to Make It
- Dice up the onions, garlic, apples, turkey neck. Sauté them up in a pan with oil and butter, and add your flour as you’re doing so.
- Keep stirring until it makes a roux and gets thick. Don’t let the flour burn! You want it to be blonde-colored.
- When the onions and the apples start to caramelize, then you add your chicken broth. Bring it to a boil, and keep stirring until it gets thick.
- Then let it simmer for about 35 minutes. You can add cinnamon and/or a little bit of allspice if you want, but it’s optional.
