Ingredients
For the Spring Onions
- 2 bunches large spring onions
- 2 tbsp olive oil
- 1 tsp coarse sea salt
For the Romesco Sauce
- 50 g almonds
- 15 g pine nuts
- 25 g shelled walnuts
- 3 sun-dried tomatoes
- 2 small tomatoes
- ½ red chilli
- 2 cloves garlic
- 4 tbsp vinegar
- 5 tbsp olive oil
- 2 tbsp tomato puree
- 7 tbsp water
- ½ tsp salt
How to Make It
- Process all the ingredients for the romesco sauce to a paste in a food processor using the pulse function.
- Mix the spring onions with the olive oil and salt.
- Grill the onions over direct heat for 15–18 minutes, turning them over often. Serve with the romesco sauce.
