A delicious and wholesome chicken recipe that is lightly spiced and packed with nutrition! You’ll want to eat this all week.
Ingredients
- 4 tbsp olive oil
- 8 chicken thighs, boneless, skinless
- 2 tsp garlic powder
- 2 tsp dried basil
- 2 tsp oregano
- ½ tsp ground pepper
- 1 tsp salt
- 4 cups grape tomatoes
- 8 cups Swiss chard or kale, chopped
- 5 cloves garlic, minced
- ¼ cup feta cheese
How to Make It
- Season the chicken thighs with garlic powder, basil, oregano, pepper and salt.
- In a large skillet, heat 2 tbsp. of olive oil over medium-high heat. Add in the chicken thighs and cook for about 12-15 minutes or until cooked through. Transfer to a tray or plate and cover with foil.
- Add 2 tbsp. more of olive oil to the skillet and add in the minced garlic. Cook for a minute or two and then add in the grape tomatoes. Cook for 4 minutes more or until tomatoes start to soften. Add in the Swiss chard or kale and cook for 4 minutes more. Lastly, add in the chicken and heat for 30 seconds. Top with feta cheese and serve. Enjoy!
