A yummy sandwich indeed. Roasted garlic with basil and cheese. This burger is a sure winner!
Ingredients
- 2 garlic bulbs
- 1 tbsp oil
- ¾ cup Parmesan (grated)
- 1/3 cup onion (finely sliced)
- ⅓ cup oil-packed dried tomatoes (snipped finely)
- ½ cup basil (freshly chopped)
- ½ tsp black pepper
- ¼ tsp salt
- 1½ lb ground beef
- 8 oz Italian sausage
- 6 oz Mozzarella cheese
- 6 rolls Ciabatta or round, (opened)
- olive oil
- baby spinach leaves
- ripe olives for garnishing
- olive mayo (mix ½ cup mayonnaise, 2 tbsp. olive tapenade)
- 1 Tbsp fresh basil
How to Make It
- Heat oven to 400°F.
- Remove tips from the garlic bulbs and the loose papery leaves.
- Make some foil parcels by spreading the foil; placing the bulbs in the middle, cut side down and drizzle with 1 tbsp. olive oil.
- Now fold the foil to make a package. Roast garlic until the cloves are soft and starting to pull loose, roughly 35 mins.
- When it’s cooled, mash the cloves out to form a paste.
- Combine crushed garlic with the onion, Parmesan, basil, dried tomatoes, pepper, and salt.
- Lightly mix, then add the meats, again mix very lightly and shape into 12 patties: ½ inch thick and 4” wide.
- Slice the mozzarella into 6 (½” wide) slices. Place cheese on half the patties with then cover the “patty sandwich” with the other 6 patties.
- Pinch the edges of the sandwich together to seal. This prevents the cheese from leaking out.
- Preheat the grill, then reduce heat to medium-hot. Lay the patties onto a rack away from the heat, close the grill and cook until done.
- Serve and enjoy.
